The answer is simple: it's in the marinade. And now you can try it at home!
Chef Jon’s Beef Marinade
Great for flank steak, eye rounds, and prime rib.
¼ cup Worcestershire Sauce
¼ Soy Sauce
¼ Cup Sherry
3 tbs Montreal Steak Seasoning
5 cloves of garlic, minced
2 medium shallots, minced
¼ cup horseradish
¼ cup ?????? (you didn’t think we’d give away all of our secrets, did you?)
Combine all ingredients in bowl and mix. Place beef in appropriately sized plastic bag. Pour marinade over beef and massage in. Seal bag air-tight. Marinate under refrigeration for up to 4 days.
